Black Bean Peanut Butter Date Bars

Ingredients
  • 1 can black beans
  • 2 tablespoon cocoa powder
  • ½ cup oats
  • ¼ teaspoon salt
  • 5-7 dates
  • ¼ cup coconut oil
  • 3 teaspoons vanilla extract
  • ½ teaspoon baking powder
  • ¼ cup peanut butter

Directions
  1. Preheat the oven to 350F. Grease an 8×8 pan.
  2. Combine all ingredients in Vitamix or food processor. Blend until completely smooth.
  3. Transfer to greased pan and bake for 15-18 minutes.
  4. Let cool 10 minutes before cutting.

Notes
  • After cooking the brownies, if they look a bit undercooked, place them in the fridge overnight and they will magically firm up!
