Apple Pancakes

Ingredients
  • 1 cup old-fashioned rolled oats
  • 1 cup whole milk
  • 2 apples, diced
  • 1 tablespoon avocado oil
  • 2 large eggs
  • 1 tablespoon maple syrup
  • 2/3 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 2 tablespoons of flax seed
  • Butter for cooking
  • Almond butter

Directions
  1. Soak oats in milk for 10 minutes while dicing apples.
  2. Add the avocado oil, eggs and maple syrup to the oats and whisk to combined. Add flour, baking powder, salt, flax seed, and 2/3rds of the chopped apples, stir until just combined, do not over mix.
  3. Heat a large cast iron or non-stick skillet over medium heat. once headed add butter and swirl to coat. Drop batter into the pan in 3 tablespoon portions cooking 3 at a time. Cook until bubbles appear on the surface and the edges being to look dry. and the bottoms are golden-brown, about 3 minutes. Flip the pancakes and cook until the other side is golden-brown, 2-3 minutes.
  4. Transfer the pancakes to a plate and repeat butter and cooking until all batter is gone.
  5. Top with remaining 1/3rd of chopped apples and almond butter.
