Apple Pancakes
Ingredients
- 1 cup old-fashioned rolled oats
- 1 cup whole milk
- 2 apples, diced
- 1 tablespoon avocado oil
- 2 large eggs
- 1 tablespoon maple syrup
- 2/3 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon kosher salt
- 2 tablespoons of flax seed
- Butter for cooking
- Almond butter
Directions
- Soak oats in milk for 10 minutes while dicing apples.
- Add the avocado oil, eggs and maple syrup to the oats and whisk to combined. Add flour, baking powder, salt, flax seed, and 2/3rds of the chopped apples, stir until just combined, do not over mix.
- Heat a large cast iron or non-stick skillet over medium heat. once headed add butter and swirl to coat. Drop batter into the pan in 3 tablespoon portions cooking 3 at a time. Cook until bubbles appear on the surface and the edges being to look dry. and the bottoms are golden-brown, about 3 minutes. Flip the pancakes and cook until the other side is golden-brown, 2-3 minutes.
- Transfer the pancakes to a plate and repeat butter and cooking until all batter is gone.
- Top with remaining 1/3rd of chopped apples and almond butter.
